Classic style ribs with roast potato
1 rack of iberico pork
2 large potatoes
3 garlic cloves
Olive oil and salt.
For starters, we will make the glaze with which we will smear on the ribs. Put two garlic, fresh parsley and abundant oil into a blender and blend. This should result in a beautiful glaze texture that can suit us nicely for many other meat preparations as well. If you want, you can do more and save for another occasion.
We salt the ribs and brush it with the glaze we prepared. We place it in the oven tray, heated to 360º C and leave it for about an hour, until we see that it is nice and golden. It is important to turn the ribs on several occasions to cook evenly and avoid dryness.
The potatoes with which we will accompany these ribs will also be roasted in the oven. To do this, we wash, salt and pepper and wrap in aluminum foil, with the skin. Being large, we leave the potatoes for about an hour at about 380º C.
Serve this dish with a little aioli, it will be great for both the potatoes and the ribs.
